In the cellar
Grapes were de-stemmed and transferred to open bins - a mix of whole and crushed berries, alongside a layer of whole bunches - a layer cake approach, which brings out more of a carbonic maceration, allowing greater fruit presence and perfume in the bouquet. Cold-soak for 5 days with gentle punch downs, and as natural Fermentation starts, the cap gets wetted by gently punching down in the bins. The bins are taken to press, a gentle pneumatic press, and the resulting juice is left to finish natural fermentation in third-fill old French 225L barrels
