The grapes for this wine were sourced from a North East facing 18 year-old vineyard block on the slopes of the Helderberg Mountains. The predominant soil type is decomposed granite.
Portion crushed destemmed and fermented on skins (40%) and a portion whole bunch fermented (60%), so skin and stem contact. Spontaneous alcoholic and malolactic fermentation.
Sémillon pairs incredibly with spicy (not too hot) foods due to its moderate body and fresh acidity. Try this wine with sushi, Asian or Indian spices, pork or poultry.
