In the vineyard
Soil: Granite Exposition: Chardonnay is on a North east slope while the Chenin on an East facing slope. The Chenin was planted in 2002 and are bush vines. From day one it has been farmed dry land and yield on average 35hl/ha The Chardonnay was planted in 1998 and are bush vine as well and farmed dry land. This block yields a lot lower at 20hl/ha.
In the cellar
The majority of the Chenin Blanc was skin contact for 1 week after which we aged it in old foudres for 10 months. All the Chenin grapes were destemmed. The Chardonnay spent the first 5 months in stainless before we aged the last 5 months in old French oak barrels.
No skin contact on the Chardonnay.
Pairing suggestions
If you are interested in a tasting experience, try this wine with some North African or Ethiopian cuisine. Otherwise, something salty like roast chicken, feta or halloumi. Goes just as well with cured meats
