Description

Growing high in the hills, the grapes are blessed by ocean breezes. This refreshes the juice that builds robust with flavour, thanks to the abundant morning sun. Intense garnet to dark purple in colour with vibrant aromas of violets, black – and blue berries with a hints of black pepper. The palate shows richness and roundness with flavours of black cherries and plums. This wine will compliment any meat dishes especially meat prepared on coals.

In the vineyard
Grapes were handpicked at 25°Balling from two separate vineyard blocks. Both Malbec blocks grow on lower lying areas of the farm and have large canopies allowing for longer hangtimes and optimal phenolic ripeness when picking. The grapes were stored overnight in the cold room before processed the next morning.
In the cellar
Grapes were destemmed and whole berries were transferred into stainless steel tanks where they were subjected to a 4 day pre-fermentation cold soaking period before being inoculated. Fermentation took 15 days at temperatures ranging between 18 – 24˚C with a carefully planned pump over schedule to ensure desirable colour and soft tannins. Malolactic fermentation was done in barrels and only free run juice was used. Wine was oak matured for 14 months in 300L format French oak barrels, no new oak was used. After final blending the wine was filtered before being bottled.
