Description
A tremendous deep, rich ruby colour in the glass. A rich complex nose with lovely layers of black fruits. Prominent ripe jammy notes, black cherries and tobacco leathery spice. The dark fruits follows onto the palette accompanied by a bold tannin structure. The finish is dry and this wine will just get better over time. Alc: 14.% pH 3.54 TA: 5.68 RS: 2.88g/l
In the vineyard
Grapes were handpicked at 25°Balling from two separate vineyard blocks. Both Malbec blocks grow on lower lying areas of the farm and have large canopies allowing for longer hangtimes and
optimal phenolic ripeness when picking. The grapes were stored overnight in the cold room before processed the next morning.
In the cellar
Grapes were destemmed and whole berries were transferred into stainless steel tanks where they were subjected to a 4 day pre-fermentation cold soaking period before being inoculated. Fermentation took 15 days at temperatures ranging between 18 – 24˚C with a carefully planned pump over schedule to ensure desirable colour and soft tannins. Malolactic fermentation was done in barrels and only free run juice was used. Wine was oak matured for 14 months in 300L format French oak barrels, no new oak was used. After final blending the wine was filtered before being bottled.
